C-CELL is an instrument for the evaluation of bread and fermented product quality. The system uses dedicated image analysis software to quantify cell characteristics and external features. It is manufactured and distributed by Calibre Control International in partnership with Campden & Chorleywood Food Research Association who developed the system.

C-CELL uses high definition imaging and controlled illumination to ensure optimum image quality and consistent analysis with all instruments. The whole sample is analysed in one fast and simple operation. Data can be used to relate to existing sensory techniques and develop more objective analysis systems.

An image is analysed to provide 48 data values and 5 processed images showing particular features of the sample. Each image can be viewed in detail and can provide valuable information about cells, circulation, cell elongation, faults and shape & size information.

Data Analysis

C-CELL results are displayed in the main windowto enable viewing of all data easily. All data setsare stored in a  Database for security and futureuse. There are user options to allow display formats suitable for a particular  product or project.

C-CELL Measurements

The analysis provides 48 different data values which can be used in evaluating the sample. These measured parameters can be used to assess process  conditions or ingredient effects. Having identified those most relevant to the application, a sub-set of 6 or 8 may be utilized to suit the individual project or customer requirements.

Measurement of Cell Numbers, Average Cell Sizes and Slice Area are commonly used in most applications whereas Circulation and Elongation data may be  specific to a particular process. The importance of this data is that it is objective
and reproducible. Measurements can be used to compare products, build up a  history of quality or in research and development. Data and images are easily  transferred between users and in communication within the industry.

Cell Data

The data display includes numbers of cells, cell area, wall thickness and other  useful information. Holes or abnormally large cells are identified and quantified in relation to the cell structure. Circulation within the slice and elongation of cells is also quantified.

Dimensions & Features

The data includes basic slice information regarding dimensions and shape. Features such as area, height, concavity, break points or oven spring can be  quantified.

Brightness and Contrast measurements provide additional information about the crumb and its structure.

 Additional Software Features

Batch Analysis

The ability to analyse samples in batches makes saving data simpler and speeds up the operation. Samples are processed quickly by just saving the raw images which are then  analysed in batches later. Testing now takes just a few seconds.

Faster Sample ID

Auto numbering and product ID allows fast sample grab with minimal data input. Operators can  be more efficient and there is a lower risk of errors.

Improved Calibration

The latest version of C-CELL uses a new calibration reference which is more relevant to the  types of samples being tested. It is also more carefully controlled and the result is better  reproducibility and reliability of data.

New Screen Displays

The screen displays have been changed to provide maximum flexibility and visual  access to information. Images can be compared easily and results screens show all data. Simple selection of samples in the database to assist the user in  comparative checks.

Other Features

Many other features have been included to complement the valuable data obtained using this unique instrument. Options are also available for the output of low level data for users to utilise advanced statistical analysis.

Data Output and Advanced Options

C-CELL saves all data to a Database format. This provides a permanent archive for future reference. The Raw image is also saved  and this can be re-analysed at any time. Analysed images can be saved as required. There are a number of ways the user can efficiently use this information:

Reports

There is a standard report  facility which can be  printed or saved in different  file formats for customisation.

Spreadsheets

C-CELL exports data to Microsoft Excel or in CSV  format. This is the most  effective way of working with and formatting data to individual  needs.

C-CELL software is available with  upgrades to provide  even more data and  features:

Special Edition

This upgrade allows output of area  measurements for each cell. Cell size distribution data is available within this option and includes a simple graphic showing a  histogram of the cell size distribution. Data can be exported to Microsoft  Excel, allowing the use of more statistical and graphic  functions.

Advanced Edition

Further core data is provided with this option. Cell data can be exported to Microsoft Excel and includes cell locations, and elongation. Researchers will be able to use this option for  more in-depth analysis of the sample data.
